Option B: hibachi is the Wednesday-night-before or Friday-after dinner. The turkey roasts Thursday, hibachi handles the "cousins and friends who came in from out of town" dinner on another night. This is 80% of our Thanksgiving-week bookings.
Option C: hibachi runs in parallel to the traditional dinner. The chef cooks proteins outside while sides finish in the oven. Everything serves together. Works for 20-40 person extended-family dinners where there's no world the four burners cook it all.
Pricing — no holiday surcharge
Same price as any other day: $35 buffet, $50 two-protein, $60 three-protein, $500 minimum. For 20 adults on the two-protein package that's $1,000. Chef gratuity is optional and never auto-added.
Deposit is $50 to lock the date. Thanksgiving Day, Christmas Eve, and NYE itself fill 6-10 weeks out — Monday/Tuesday of Thanksgiving week and Dec 23 / Dec 26 usually have 2-3 week lead time.
