Why we publish this

Florida hibachi pricing is opaque. Most operators hide pricing behind "contact for quote" forms. Journalists writing about the industry, hosts comparing options, and competitors benchmarking their own pricing all need a public reference point. We publish one, monthly, with transparent methodology. We benchmark our own prices into it — not favorably — so the index can be trusted.

October 2026 — All 10 Florida operators

Prices below are the per-person all-inclusive two-protein package price for a group of 20 adults, as published on the operator's public pricing page or as quoted by their standard booking channel on October 15, 2026. Where equipment/cleanup fees are separate, we add them in.

Industry pricing inflation (3-5% annually) tracks food cost inflation plus labor. Fork Yeah Hibachi has held our two-protein at $50 for 2+ years, which has moved us from mid-pack to the lowest-cost tier in that time.

Breakdown: what's included in the median $55-60 price

• Food cost: $14-18/head (proteins + vegetables + rice + sauces)
• Chef labor: $12-16/head equivalent (based on 3-hour booking averaged over 20 guests)
• Equipment amortization + propane: $2-3/head
• Travel + fuel: $1-3/head
• Insurance, admin, brand overhead: $3-5/head
• Margin: $15-20/head (operators with higher margin tend to add equipment fees or markup upgrades aggressively)

What this index does NOT include

• National franchise operators that don't publish per-head pricing
• Hotel-based teppanyaki ($120-180/head restaurant pricing not comparable)
• One-off independent chefs without a steady booking cadence
• Pop-up operators (we track only operators serving 100+ events/year to keep data stable)

Methodology

Each operator's price is sourced in order of preference: (1) public pricing page, (2) public menu PDF, (3) real quote obtained via standard booking channel for "20 adults on Oct 25, 2026, Orlando, two-protein package". Prices are normalized to "all-inclusive per-person" — if the operator charges separately for equipment, cleanup, propane, or travel within their standard radius, those are added to the base rate. Gratuity is excluded from all operators (auto-added or not). Index is published on the 15th of each month.
